So Tell Me…What’s Wrong With High Fructose Corn Syrup?

Have you heard the phrase “a little knowledge is dangerous” ??? Well, that’s what the corn refiners association’s new T.V. commercials are banking on. Both a little of YOUR knowledge and a lot ofTHEIR knowledge. Why? Because their hoping that if you know very little about it, they can easily convince you (with a bit of "spin") that High Fructose Corn Syrup isn’t harmful to you.

You may have seen a seemingly innocent commercial. The last one was a young, probably mid 20-something couple on a picnic blanket. The woman offers the man a popsicle. The man refuses and says, no thanks, that has high fructose corn syrup. Then, the question……. So What’s Wrong With High Fructose Corn Syrup???, It’s made from corn. The man fumbles with his thoughts and can’t come up with an answer. Then he accepts the popsicle and you are now assured that high fructose corn syrup is, well, okay...if not, even good.

Knowing what I know about high fructose corn syrup, seeing and hearing this TV commercial made my blood boil. They innocently try to convince you that it’s made from corn, therefore it’s natural and harmless. It’s an easy argument if you don’t know what high fructose corn syrup is. They bank on your naïveté in not being able to come up with a reasonable answer and therefore concluding it’s "fine". They bank on the fact that you don’t know enough to answer the question as to why high fructose corn syrup is bad for you.

So….. I feel compelled to day to give you the knowledge and tools to answer this questions.

Here’s the science. The next 5 paragraphs are more technical and the information is from Mark Hyman, MD's book Ultrametabolism, his blog at http://www.Ultrawellness.comas well as 2 articles published at http://www.westonaprice.org/ , but read through them and get a basic understanding…..I simplify it further down

1. Let’s start with the base product….Corn. The corn used in high fructose corn syrup is genetically modified(as nearly all corn is). It has 13 carbon molecules instead of 12(The original non GMO stuff had only 12). According to Dr. Mark Hyman, there are no good long term studies on the effects of eating genetically altered corn or corn products. So if you are concerned about eating genetically modified foods, you already have a problem with high fructose corn syrup.(1)

2. High fructose corn syrup is far from “a natural product made from corn” as the argument goes. High Fructose Corn Syrup (here after called HFCS) is produced by processing corn starch into glucose, using 3 different enzymes and at least 5 different steps(2). Therefore, High Fructose Corn Syrup is far from being “natural”. I mean...it's not like you can blend up a can of corn in your vita-mix and come up with HFCS. It's not quite as simple as making a fruit smoothie

3. The introduction of HFCS into the food supply in the USA is associated with the beginning of the obesity epidemic. Don't believe it says Dr. Hyman....who goes on to say: Even a slight difference of an extra 100 calories a day can add up to a 10-pound weight gain in just one year. And the average American drinks 440 12-ounce cans of HFCS-laced soda each year (1). Not to mention the HFCS in ketchup, yogurt, breakfast cereals, cookies, breads, ice creams, popsicles and hundreds of other products.

4. HCFS is bad news for your waistline and your health…It makes you eat MORE!!! Yes, you read that right. HFCS actually increases your appetite.

Here's how: Regular table sugar is 50 percent glucose and 50 percent fructose, while -- as its name implies -- HFCS is 55 percent fructose and 45 percent glucose. Doesn't seem like a big difference, but it can have HUGE effects on your appetite.

When you eat fructose, it doesn't set into motion the chemical reactions and hormones that tell your brain you are full. For instance, high fructose corn syrup doesn't stimulate insulin secretion or the increase in leptin (the hormone that makes you feel full). While glucose is transported into the brain, affecting brain signals that control or limit appetite, fructose is not.

Plus, high fructose corn syrup doesn't reduce ghrelin, a stomach hormone that stimulates appetite. And high fructose corn syrup may also decrease adiponectin levels, which is a hormone made by fat cells that helps make you more sensitive to insulin and helps control your weight and appetite. What does all that mean? Simply put, when you eat more fructose you don't feel full -- so you keep eating!(1)

5. Here's an undisputed medical fact: You can survive on an intravenous drip of glucose. But replace the glucose with fructose, and you'd get a fatty liver. That's because fructose is the source the chemical building blocks of cholesterol and triglyceride production. And fructose just isn't digested, absorbed, or metabolized in the same way as glucose. Instead, it goes right to your cells without the help of insulin(1).


The result? Fructose moves right into fat production -- so it spikes your triglycerides but lowers your HDL ("good") cholesterol. It also increases your levels of small, dense LDL (called LDL-B) cholesterol, which is much more dangerous than regular LDL ("bad") cholesterol. (1)


Let’s Bullet Point Your Answers clearly.


Here’s the Top Ten List of Why High Fructose Corn Syrup is bad for you:


1. High Fructose Corn Syrup is made from genetically modified (GMO) corn. Which you should know, most corn nowadays is GMO.


2. High Fructose Corn Syrup is far from being natural as it takes high heat, 3 different enzymes and 5 different processes to create it.


3. The introduction of High Fructose Corn Syrup into society coincides with the beginning of the obesity epidemic. As HFCS beame more widely used, the rate of obesity climbed as well, bringing with it all those obesity related problems like diabetes, heart disease and cancer.


4. Because High Fructose Corn Syrup is so far removed from a natural food, it fails to stimulate leptin, the hormone that makes you feel full.

6. Because High Fructose Corn Syrup is so far removed from a natural food, it may also decrease adiponectin levels. Adiponectin is a hormone made by fat cells that helps make you more sensitive to insulin and helps control your weight and appetite


7. Because of #’s 4, 5 & 6, eating high fructose corn syrup fails to do 3 things your body needs to feel full and curb your apetite…..so you keep on eating and eating and eating...


8. High Fructose Corn Syrup spikes your triglyceride levels


9. High Fructose Corn Syrup lowers your levels of “good cholesterol” (HDL)


10. High Fructose Corn Syrup increases your levels of LDL-B cholesterol. LDL is your “bad cholesterol”, the LDL-B is the “bad of the bad cholesterol”.


The science is clear: HFCS/Fructose consumption in this mannor is associated with insulin resistance, increased calorie intake, impaired metabolism, weight gain, high cholesterol, and high blood pressure.(1). All of which is associated with Diabetes, Heart Disease, Cancer and a hell of a lot more…

So the next time someone asks you what’s the big deal with HFCS….read them bullet points 1-10 and I’d just about guarantee ya they’ll soil their pants when you rattle-off that answer.

PS... after further thought, I realized I should have made it a "Top 11" List. As I have said in prior blog posts, what we should and should not consume comes down to evolution. Corn itself is a newer evolutionary product. 99% of the corn available today has been genetically engineered and is far from it's original form. Then, it's refined, heated, treated with 3 different enzymes in 3 different processes, put through 2 more processes to come up with the HFCS. So number 11 is:

11. EVOLUTION. High Fructose Corn Syrup has not been part of the human evolutionary diet over the past 50,000-100,000+ years and our bodies don't have the physiological process to adapt to it. Therefore, we cannot properly process HFCS which is why it fails to stimulate the 3 hormones listed above, bypasses insulin to get into your tissues and causes weight gain, increased triglyceride and cholesterol levels, increased risk of diabetes, cancer and heart disease.

Over Fed & Under Nourished....Let Food Be Your Medicine and Take Back Your Health


It’s been just over 18 months now since my personal physician told me to make some big changes in the way I eat or I’d probably die of a heart attack in 10 years.

To recap, I had just had a CTa; a 3-dimensional CAT scan of my heart so that a radiologist can check the condition of my heart’s blood vessels. By some grace of G-d, my cardiac vessels were in great shape; in-fact, they were in incredible shape. But, the problem was that my cholesterol was high, my triglycerides were high and my blood pressure was borderline. Not to mention, I was pushing the scales at just under 220lbs. So although my heart was in excellent shape, the cholesterol, triglycerides and blood pressure were setting me up for a hard fall in the not so distant future.

On a prescription pad Dr. Woolf wrote the name of a book: Ultrametabolism, by Mark Hyman, MD. My prescription was to read the book and to live the book…and so I did. The book in summary told me to eat whole foods, not processed foods. Told me not to skip meals or reduce my calories, but to eat the right foods at the right times to speed up my metabolism. And of course, get recommitted to exercising. All of which I did, and I did well.

It worked. After 6 months, my cholesterol, my triglycerides and my blood pressure were normal again and I weighed in at 194. To read more on out how I did this, read my blog on beating lipitor in 6 months

My struggle continues though as I’ve realized that crappy food is so abundant in our society, it’s nearly impossible to eat and snack healthfully (and tastefully) without examining the label on everything I want to purchase from the grocery store. Even Yogurt has high fructose corn syrup, the same sweetener as you will see in Coca-Cola & Pepsi and every other soda on the market and yes, another man-made substance that is slowly killing our children and ourselves. Most of the foods we consume also have hydrogenated or partially hydrogenated oils in them. A substance that is incredibly toxic to which scientists have said that this substance is like ingesting plastic into our bodies.

Most of you know how I felt when I stumbled onto Larabars. Which, I continue to enjoy to this day and hope to for a long long time; but, I’ve found another snack that can also be used as a meal!!!

Yes, I’ve finally found another source for not just in-between meal snack, but for real whole foods that you can replace any meal with. The Company is The Whole Food Farmacy. Losing Weight Is Wrong!

Yep, you heard me right. If your goal is to lose weight, you’ve already lost. It’s a pointless goal; Really. What happens when you lose weight? Then what? You’ve met your goal, now you can go shovel down some pizza and chocolate cake again because your goal was simply to lose weight. Or, you can get off that treadmill and plop back down on the couch because, yep, you’ve met that goal of losing weight.

Being fat, overweight or obese isn't really the problem. It's the life-style you lead that gets you fat, overweight or obese that is the problem. So losing weight doesn't solve anything. If it did, liposuction would actually work long term without modifying your eating or exercise. So simply losing weight is wrong!

You see, obese people aren’t the only ones that suffer from heart attacks and strokes. Thin people do as well. So why is it that you want to lose weight? Just to fit into an old pair of jean? Because society seems to grovel over people with “hot bods”. Not good enough. Obesity and the unhealthy habits associated with it don’t just lead to heart disease, but cancer and diabetes too. Diabetes can be a precursor to many other health problems as well.

The reason I say losing weight is wrong is because you are simply addressing the symptom of a problem. Treating the symptoms of a problem is akin to pulling the batteries out of your smoke detector rather than put out the fire that is causing the smoke. My training teaches me to address problems, not symptoms.

So what’s the problem then? The problem is, the reason you are overweight or obese is because you are unhealthy. The problem is you are unhealthy and being fat is a symptom of that problem. You become unhealthy first and then get fat second (and obese third). So you need to address the problem that caused the symptom, not the other way around. So, how do you start?

1. Identify the Problem. Is there some metabolic problem? Is there a problem with your thyroid? Is there some other problem? Maybe it’s as simple as your eating habits are horrible and you make bad choices for the type of food you purchase and eat. You need to go to your physician and find out.

2. Educate yourself. You need to learn about your problem. You need to learn exactly how unhealthy you are and then learn what changes you need to make in your life to properly fix the problem. How do you educate yourself. Here’s a list:

1) Go to your family doctor or internist and get blood and urine tests. You want to know the basics which are:
2) Your pertinent family health history
3) Your cholesterol level
4) Your good/bad cholesterol ratio
5) Your Triglyceride level
6) Your body’s ability to handle sugar? Are you diabetic or pre-diabetic?
7) Your blood pressure

8) CTa – A CAT scan of your heart / heart blood vessels
Stress Test (Nuclear)
9) Your thyroid function

Once you have this information, you can set proper goals. Your goals should be specific, positive, have a date in which you want to achieve them & action steps on how you are to meet your goal. For example:

GOAL: I am going to reduce my cholesterol from 290 to 190, and my triglycerides from 255 to 150 by January 1, 2007.

ACTION STEP: I will achieve this by:
Cutting out all Trans Fats & Hydrogenated Oils from my diet
Cutting out all products with high fructose corn syrup
Cutting out all products with corn syrup
Cutting out products with added sugar
Cutting out dairy products
Cutting out refined foods
Eating only whole food based meals
Eating only whole grain breads
Eating steel cut oatmeal rather than rolled oat oatmeal
Cutting out all sodas, regular and diet
I will schedule out 4 specific times per week to be in the gym and exercise 4 days per week.

Stupid diets (which are most of what you see advertised) based on calorie restriction just don’t work, which is why you’ll never win if your goal is to lose weight. If your goal is to become healthy, then you’ll win.

1st, choose the right goal, then you can create a success plan around that goal. Losing weight has an end, becoming healthy is a life-style.

Oh…one more thing. Once you make the decision to learn to be healthy. If you don’t want your children to grow up and develop the same problems as you, don’t be selfish.....Teach your children. It’s your responsibility.

Lipitor: How I Beat Lipitor in 6 Months (And You Can Too!)

So, in my original blog post on How To lower high triglycerides and high cholesterol, I told you that my personal physician gave me a prescription for a book called Ultrametabolism and told me to read it a live it. And so I did. I have to apologize to my family for driving them nuts over the past 6 months. I’ve taught my children to read ingredient labels to look out for evil things such as hydrogenated oils, partially hydrogenated oils, high fructose corn syrup and corn syrup. All of which have no place being inside a human and all of which your body has no physiological idea how to process. As I learned, so did they.

My goal specifically was to lower my cholesterol from 290 to under 200. “Woolfie” (More professionally known as Islon Woolf, MD) called me while taking a break on Friday and told me the good news. My follow-up cholesterol test measured my total cholesterol at 195. I did it - I Hit My Goal! Now I want to bring it to 170.

Lipitor is not even a remote consideration at this point. My cholesterol and all the subfractions of cholesterol were great. So, now I am proud to say that I am not in a heart disease risk category any longer and it only took 6 months. I probably did it in 3-4 months but I couldn’t get back in to see Dr. Woolf to get my bloodwork due to my own busy schedule.

What did I do in the past 6 months? Basically, it was good food and exercise. More specifically, I’ve followed the guidelines in Mark Hyman MD’s book Ultrametabolism and I’ve been in the gym 4-5 days per week doing a combination of interval training on the Life Fitness elliptical machine and the Stairmaster; cardio kickboxing classes & group power classes at Equinox and good ‘ole weight training. I’ve become very comfortable with what I can and cannot eat at this point. So much so it feels normal. I cook various foods that I use to love but just with healthier ingredients. I eat out, but am more selective and will ask for things to be cooked in Olive oil, without cheese, broiled or grilled instead of fried. If I’m going out for the day, I prepare ahead of time a meal and a snack or two just in case I get stuck, at least I’ll have something healthy to prevent that hunger sensation from coming on.

Bottom line; regaining your health and losing weight isn’t as much a chore as it is a mindset. Get your attitude in-line with your goals and then it’s easy simply because there is no other choice. If you decide to do it, then you will. If you say you will try, then you will fail because saying you will try is leaving yourself a way out.

Today I did 70 minutes of speed intervals on the Stairmaster. For my cardio it's either that or the (Life Fitness) Elliptical trainer. I just had my suits altered in the jacket and 2 ½ inches taken in on the pants. I easily fit back into a size 36 jeans with a bit of room to spare and I have to go buy new belts because I’m on the 6th belt loop. Yes, by reducing your cholesterol and triglycerides you will lose weight too. But, I warn you, don’t try to lose weight to lower your cholesterol and triglycerides. No, it's not the same. The mindset is all wrong and the results could be disastrous . Thre are a lot of ways to lose weight that are very unhealthy. Just because you are thin doesn’t mean you are healthy. Trust me, I’m living it.

Dr. T’s Guidelines To Reduce High Cholesterol & High Triglycerides (and you’ll also lose weight too!!)

This is a long blog entry. It’s packed with good information and references. Doctors, feel free to print this out and use it as a reference. Just please make sure you reference where you got this info. Oh, this is reference material. "Food for thought", so before you start any weight loss or exercise program, consult with your personal physician

If you’ve been following the classic USDA Food Pyramid for the last decade or so, you’re probably extremely obese, have high cholesterol and triglycerides, have bad skin, probably have diabetes, or cancer or heart disease and are close to dying. Which is why health professionals “in the know” have been urging the USDA for years to change it. Finally they listened and they’ve almost got it right, but like most government agencies, they are still beholden to the big industries and their power lobbying. Why? Because to them, jobs and the economy are more important than your health. Several months ago, my personal physician, Islon Woolf, MD; On a prescription pad wrote: Ultrametabolism; Mark Hyman, MD. He told me to buy it and read it and follow it. And so I did. It changed my life and it can change yours. I've been using the info I learned in this book the change the lives of my patients as well.

If you want to reduce your cholesterol and triglycerides, and live life to it’s fullest potential, try the following:

1. Cut out all foods with High Fructose Corn Syrup
2. Cut out all products with Corn Syrup
3. Eliminate any added sugar from your diet.
4. Eliminate Hydrogenated Oils from your diet
5. Eliminate Partially Hydrogenated Oils from your diet.
6. Eliminate white and wheat flour from your diet
7. Cut out rolled oats (typical oatmeal)
8. Eliminate white rice from your diet
8. Cut out all fried foods.
10. Cut out red meats & pork
11. Cut out caffeine in all forms.
12. Cut out dairy (there are other, much better sources of calcium anyway, try green leafy vegetables, tofu, sesame seeds, etc.)


Don't starve yourself or cut our meals. It will only slow your metabolism and cause you in the end to regain the weight you've lost and pack on even more!


OK, now that you're in shock, here's what you can eat:
1. Eat only organically grown, range fed and/or wild chicken or turkey
2. Eat only wild fishes (not farmed) if available. Especially Salmon. Stay away from bottom fish
3. Eat only whole grain breads (yes they can be found); whole wheat doesn't count.
4. Eat only whole grain or Konjac Pasta(http://www.konjacfoods.com/). Konjac pasta tastes kind of rubbery and whole grain pasta is a bit gritty. Konjac is known as a "superfiber" and slows the absorbtion of CHOs (carbohydrates).

5. Eat 5-9 servings of Fresh raw Fruits & veggies per day. Preferably Organic & vine ripened.

6. Take a properly balanced Omega oil supplement I prefer Flora’s Udo’s 3-6-9 Oil Blend. Take 1-Tbsp per 50-lbs of body weight. It can be drizzled over salads or simply spoon it in. It must however, always be kept cold. Any heat will destroy the health benefits of this amazing balanced omega oil.

7. Take whole food supplements rather than individual vitamins. Vitamins and other phyto-nutrients were meant to work "in concert" with one and another how they exist in nature. Not individually. Unless of course you have a specific deficiency.

8. Drink green or red teas to provide rich anti-oxidants and to help you relax. Do not add milk to tea as it destroys the cardiovascular health benefits of tea

9. Eat Steel-cut oats (This is the kind of oatmeal that takes 30-40 minutes to make. The kind your grandmother use to make your parents for breakfast)

10. Add Raw Almonds to your diet. It's amazing how healthy they are. Eat them in-between meals for a snack to keep yourself from getting hungry. Almonds are incredibly healthy for you as long as you aren’t allergic or have diverticulitis or diverticulosis (check with your doctor). Yes, almonds have fat; but they’re good fats and you need to eat them!!! Eat ONLY RAW Almonds.

Oh, and yes, Avocado has a lot of fat too. But it’s good fat. Eat them, enjoy them and you’ll get healthier.


The Bottom Line...Eat Whole Unprocessed Foods to Speed Up your metabolism so it burns more calories. Here's how I explain this "speeding up your metabolism" thing to my patients:

Think about one of those old coal burning locamotive trains. You have a big pile of coal, an engine that runs off of steam and a fire that boils the water to create the steam. If you don't put in enough coal (starve yourself) the fire will die, the water won't boil and the engine will shut down. Then you are left with a big pile of coal. Which, now you can store (fat) for later use.

If you shovel in too much coal (eat too much) you will smother the fire, causing the system to shut down(slow down your metabolism -- kind of like when you go to sleep after eating too much)

Now, if you shovel in the right amount of coal, you keep that fire burning, the water boiling and the engine running(metaboism). This way, you get to your desired location (results). Keep the fire burning throughout the day by shoveling in moderate amounts of coal (with snacks and lunch) to keep the engine chugging along.

So, you must eat the right foods at the right intervals to keep your metabolism burning those calories. Don't be temped to skip a meal. You'll only slow down your metabolism.

Here Are Some Of The Rules I Play By:
1. You must read labels on everything you purchase when shopping for food. Trust me on this, they’ll sneak stuff in the most unsuspecting foods. I've seen "100% Whole Wheat" breads and multi-grain breads that were nothing more than multi-ground flour breads sweetened with high fructose corn syrup. It's nasty and not only isn't it good for you, it's poison to your body and will raise your triglycerides! Read the ingredient list, not the front of the package. It's not the mixture of multiple ground up grains, it's the multiple whole grains that is most important.

2. As the saying goes, Eat Breakfast like a King, lunch like a Prince & dinner like a pauper.

3. Eat a Large breakfast to get your metabolism kicked into high gear.

4. Eat a handful or two of raw almonds in-between breakfast and lunch to prevent hunger and to keep your metabolism burning strong. Apples also make for a nice in-between meal snack. The in-between meal snack is very important to keep your metabolism firing away!!!

5. Eat a moderate size lunch.

6. Eat a handful or two of raw almonds in-between lunch and dinner to prevent hunger and to keep your metabolism burning strong through the afternoon.

7. Eat a “smaller” to medium size dinner. Keep it on the lighter side.

8. Do not eat 3 hours before bed. Any foods eaten during this time will simply be stored as fat as your metabolism slows down before bed and while you sleep.

Preparation is the Key to Success!!!
1. If you prepare your foods and snacks in advance, you can eat regularly and prevent that ravenous hunger (Like a shark’s feeding frenzy) that takes over your body when you’ve gone too long without eating. When the hormones kick in, well, you’re pretty much “S.O.L.”. Prepare your foods and prevent that from happening.

2. Prepare something to eat right after your workout. If you go too long without eating after your workout, you will allow yourself to get hungry and your hormones will kick into overdrive and you will be powerless over them. Plan a little post workout snack if you can’t sit for a proper port workout meal.

3. Get a small cooler for your car and bring your snacks and meals with you if necessary.

4. Drink plenty of water. Keep hydrated.

5. Exercise at least 4 days per week for a minimum of 60 minutes. Even if it is just walking, it’s a good start and it’s better than doing nothing. Personally, I do a mixture of cardiovascular (interval training) & weights. At my gym, I even take several group fitness classes that mix weight training, flexibility and aerobics. If you've never exercised before, you should hire a personal trainer. to guide you and teach you how to exercise properly. Also, don't forget to check with your doctor prior to beginning any exercise program.

6. Now, take all your new knowledge and teach your children. Teach your children’s children and so on and so forth.
